We all have those recipes that take us back to wonderful times with family and friends.  This cheeseball recipe is one of those for me.

My Auntie Carrie is my favorite aunt.  She has always been beautiful, inside and out.  She is sweet, funny, smart, and creative.  And y’all, the woman can do just about anything she sets her mind to!  She’s amazing, and the compliment I enjoy receiving most is that I remind someone of my Auntie Carrie, ’cause GOSH, I wanna be just like her when I grow up.  😉

I love my Auntie Carrie and her ammmazing cheeseball. 😉 A holiday tradition in our family, ever since I can remember, this cheeseball is the yummiest combo of sweet and savory...You are gonna love it!

Equipment

  • 1 Knife for chopping ingredients
  • 1 Cutting Mat for chopping ingredients
  • Plastic Wrap for wrapping cheeseball
  • 1 Medium Bowl for holding cheeseball to chill
  • 1 Platter for presentation
  • 1 Spreader for serving
  • 1 Box of Crackers for serving

Ingredients

  • 2 8 oz. pkg. Cream Cheese
  • 2 cups Shredded Cheese (I prefer Monterey Jack or Cheddar)
  • 1 8 1/4 oz. can Crushed Pineapple, drained
  • 1 med. Bell Pepper, diced (I prefer green or red for color)
  • 1/4 cup Onion, chopped
  • 2 tsp. Seasoned Salt
  • 1 1/2 cup Walnuts or Pecans, chopped

Instructions

  • Before mixing the ingredients (and your hands get all messy) line a medium sized bowl with plastic wrap. You will place the ball in this bowl and wrap it up when you are done mixing the ingredients together.
  • Mix cream cheese, shredded cheese, well drained crushed pineapple, diced bell pepper, chopped onions, seasoned salt, , and 3/4 cup of nuts together in a bowl. Mix well.
  • Once ingredients are mixed well, shape them into a ball, and roll the ball in the remaining 3/4 cup of nuts. Place on plastic wrap in bowl, wrapping carefully. Leave the ball in the bowl to chill.
  • Refrigerate until ready to serve. Can be made a day ahead of your event.
